The key to cooking with any pit is creating an even temperature throughout, distributing the heat from all sides. In a traditional smoker, this means placing coals on the bottom and food on the grate above it to let the heat rise up and cook the food evenly.

Not only does this affect cooking temperature but it also requires more fuel as air has to come in from somewhere else. By closing off all of your air intake vents except for one, you force all of your air to go through the main chamber where it mixes with smoke coming out of the smokestack before it gets pulled into your food via “the snake” method. This means that no heat or smoke escapes out of the firebox and all the heat/smoke is being used to properly cook your food! It also makes maintaining temperature a breeze as after you have run your smoker for a little bit, you will know exactly how much fuel to use for any given temperature since it doesn’t fluctuate because of air leaks from the firebox/door.
3) Hit a wider range of temps – I can hit 275-325 very easily with this rig which is perfect if I want a quick cook recipe or something on the hotter side for competition purposes. On my other offset style smokers, anything over 280 would be pushing it without pulling almost all of my vent stack out (which I do not want to do). Also, my other smokers are extremely finicky when it comes to achieving a stable temp. The Highland just idles right in the zone without any issues.
4) More efficient – There is no question about it that this will run you more fuel than an offset style smoker with the same smoking chamber size. On average, I am using half of what I was using on my previous rig (which by the way had less than half of the cooking area of this one). This has made competition season even more fun/stressful given the fact that I don’t have to worry about running out of propane mid cook or during turn-ins like my old smoker!
5) Cooking grate position adjustment – You can easily raise and lower your cooking grate during a cook with the push of a button! With my old smoker, I have to wait until it is cooled down and then open up the firebox to adjust the grates. This isn’t so bad in the winter when its cold outside but in the summertime, you will most likely want to just keep that lid closed.
6) The look – I think this thing is beautiful and it matches perfectly with my cart that I have been using for a few years now. It looks very professional at comps which again gives me an edge over my competition (in my eyes).
7) Reverse flow design prevents any creosote from getting into your food unlike other types of smokers such as water smokers or offset style smokers. Another bonus is that you don’t have to clean the main chamber out with water like most offset style smokers which can cause rusting and heat loss issues.
8) Heat source – There are many ways to run this type of smoker such as charcoal, pellet grills, etc. I am using a home made propane tank adapter and just running 16 oz disposable propane bottles. This has been by far my cheapest/most efficient way of running this and it works great! 9) Durability – I have been using this smoker almost daily for a year now and it is still in perfect condition! My other smokers would have rusted out by now, started having rusting/heat loss issues due to water usage, or just broken down in general from all the use. It has been one of my best investments that I have ever made in my cooking journey.
