-Make sure to order the proper size chimney starter because you don’t want it to be too small or large. For larger grills, I use a 45qt pot instead of the recommended 30qt pot. The idea here is that you want the chimney starter to sit on top of your grill safely without touching any surface.

-If you are using it for high temperature burning, then make sure to line the bottom with aluminum foil and clear off as much ash as possible before each firing. You can do this after every low and slow cook too! Keeps the ashes from getting all over and makes cleaning up a breeze. -If you want to start your fire faster, there are two things I do to get it going faster. First, use lighter fluid instead of just a charcoal starter to speed up the process. Second, slightly bury your starter chimney under a few pieces of natural lump charcoal on an open flame.

-To prolong the life of your Kamado Joe firebox, soak down your grill after each cook with water. This will prevent rust from building up! If you have little to no rust at all once you are done cooking, then you can skip this step or place it in indirect heat for 10 minutes.

-To season your cooker before first use and between cooks, lightly coat the inside with vegetable oil using paper towels (no need for soaking). Cooking bacon helps favorite your cooker further.

-I never use the bottom ash pan because it makes it harder to clean after each cook. I typically pour out any hard ash before starting a fire. If you are using lump charcoal, there is no need for this step. However, if you are using natural briquettes, then do this step first! This tip works on Kamado Joe Ceramic models as well!

-If you are having trouble getting consistent temperature throughout your cooker, then place foil balls or aluminum pie plates between the handles of your grill lid to reflect heat back down into the cooking area. I personally have not had any issues with uneven heat distribution so I have not tried this method yet…..gives me an excuse to buy some pie plates though:)

-Keep a tub of water or fire extinguisher nearby when using this grill for the first time just to be prepared! I learned that one before watching my brother burn his front porch down while cooking ribs:). Place your cooker on top of something sturdy and safe like patio bricks. Also keep small children and pets away from it while it’s burning/hot! You can also protect your floor by placing a large piece of plywood underneath the grille. If any coals fall through, they’ll catch on the wood instead of the ground. This tip works on Kamado Joe Ceramic models as well!

-Make sure to buy a good quality cover because these cookers are not cheap!! The few extra bucks to get a good cover will save you tons of money in the long run. The cheapest covers will not offer protection for your expensive investment and will break down within a few months regardless.

Light the front coals in the ash pan using a match or lighter and have them spread evenly across the bottom of your grill. Open all the dampers completely to allow airflow over the fire and once you have 30-40 hot coals, move them into your desired zone by pulling forward onto they grey grate bars that run from side to side on top of your kamado Joe’s body. Once you have all of your coal in place, close up all 3 dampers halfway and wait about 10 minutes until a light smoky smell appears before cooking–this is called “preheating.” That’s it, you’re ready to grill!
