Because pork chops are lean, soaking them in salt water accomplishes two goals. To begin with, it maintains the meat wet by offering additional moisture, which acts as a safety net in case the meat becomes overdone. Second, it evenly seasons the flesh rather than just the surface.
Cold water whisked with salt is the foundation of this simple salt water. I like to add a little sugar to help the meat brown on the grill, and you can also add aromatics like citrus peel, peppercorns, or bay leaves (or all 3). To prepare my salt water, I use Diamond Crystal kosher salt. If you wish to use another type of salt, I recommend using comparable weight rather than amount because the size of the salt grains varies greatly between brands and weight is one of the most precise measures.
Brining does not have to be complicated or time-consuming. Given that they are chops rather than a large bird like a turkey, brining for 30 minutes works wonderfully, which has to do with how long the grill will take to heat up. The chops can be brined for up to 2 hours, but don’t go beyond that the construction or the meat will turn spongy. You may also brine frozen pork chops separately; simply leave them in the brine for the entire 2 hours. Then they’ll be defrosted and prepared to grill.
