Yes! They are fantastic for indirect cooking.  You can do all sorts of slow roasting and low-temperature cooking that is difficult to achieve on a normal grill. The difference between direct and indirect heat is important to get correct when grilling/barbecuing. Do not cook at too high of a temperature or your food will burn before it finishes cooking through, but do not cook at too low of a temperature or you may be waiting hours before it’s done (I’m lookin’ at you pork shoulder… Direct heat occurs underneath the meat, and you want to cook hot and fast. You can get a nice searing on your meat, but not much more than that. Foods cooked with direct heat tend to have lighter flavors because they pick up less of the flame’s smoke particles (slight flavor nuances will be lost). Indirect heat occurs above the food, around it, or off to the side where there is no flame hitting it directly.  Cooking with indirect heat takes longer because the meat isn’t getting any of the intense direct radiant heat from below — this allows time for a looser bark to form (the browned outside crust) which adds a tonne of flavor.

What Are Flat Top Grill Cooking Tips?

If you have a gas grill, start your meat over direct heat to get a nice sear and then move it to indirect heat.  If you have a charcoal grill, start your meat over indirect heat and then move it to direct heat (charcoal will burn quicker than gas; if you want the same cooking times as those mentioned on this page for gas grills, make sure your coals are only as hot as they need to be).

Avoid flare-ups! Flare-ups occur when fat from what you’re cooking hits the flame and coats the food with an acrid taste. Cooking low and slow (with indirect or no flames) reduces the chances of flare-ups because there is less dripping fat! When something does drip onto the flame, use a squirt bottle to put it out (wait 5 seconds between sprays and don’t drench the grill in water–you will need that later to clean your flat top box).

What Are Some Good Foods To Cook On A Flat Top Grill?

Chicken, beef, pork, hot dogs, burgers, steak, lamb chops/steaks are great on the flat top. Use this for cooking steaks. Use this for cooking ribs or pulled pork. If you have a gas grill with multiple burners that allow you to control the heat by “zones”, then using it as an indirect heat oven is fantastic for making baked goods! If baking isn’t your thing, you can do what I’ve done in the past: cook meat (chicken or roast) inside and finish them off with some extra tasty scorching over direct heat.

How Do I Clean My Flat Top?

You want to clean your flat top after every use.  If you leave a lot of grease or fat on there, it will eventually harden and then you’ll be scrubbing for hours trying to get those annoying burned bits off…  Clean as soon as possible!  Start by removing the cooking grates with a cloth rag. Scrape off any pieces that won’t come up with the rag, scrape them into the trash/compost/sink-drainage area if they’re too small to pick up. Turn on both sides of all burners for 30 seconds-1 minute each (this is what turns your grill from a smoking inferno into a work surface).  You should see the flames die down. Use a scraper or spatula to scrape off any leftover meat bits/burned areas (do not use your grill brush because this will scratch up your flat top and it’s bad for your food to ingest metallic particles).

Clean the grates with regular dish soap, rinse them off, let them dry, and stick them back on. That’s it! It takes me less than 5 minutes every time I clean my flat top grills between uses–you can’t beat that.  If you don’t have a gas grill with multiple burners, you might want to think about getting one so you can cook different meats at different temperatures at once.

When Do I Replace My Flat Top Grilling Surface?

It’s hard to pinpoint an exact expiration date for your flat top grills, but most of the time you can use it for a year or two before needing to replace it.  Most people tend to keep their grill surfaces longer than they should because they forget when they bought them and how old they actually are… Then one day they look at my food and exclaim: “I used to be able to do stuff like this!” and proceed to cook something on their grill that tastes like ash. After about a month of frustration with charcoal grills, we invest in all-new grates so we don’t have any more problems (it’s easier than making our own). If you’re not using cheap equipment, then you should really consider getting new flat top grills every so often instead of trying to clean stuff that’s really hard to clean.

What Kind Of Grate Should I Get?

There are endless possibilities for grill grates.  I first got the stainless steel wire grates because they were cheap and worked well enough… But I prefer cooking on cast iron now–it gives food a unique taste that is tough to explain but really tasty. You can also get hammered copper grates which are awesome looking but expensive as hell–damn you imported kitchen goods! Whatever type of grate you choose, just make sure it fits your flat top box dimensions.  You don’t want to invest in something awesome only to find out your flat top box is 48″ instead of the typical 48.5″.  The grates should fit pretty snug, but you can always make some minor adjustments with a file or sharp knife.

How Big Of A Fire Does My Flat Top Need?

As much as possible! Always start your fires using whatever you’re using to bring your grill up to temperature (charcoal lighter fluid, scented/flameless oil starter cubes, fire starter log if it’s not summertime, etc). If you’re cooking something that takes less than 5 minutes on each side, then you don’t need an open flame–just turn all burners to full blast for 30 seconds-1 minute and at the highest temp possible. For red meat or fish, you want to get a nice hot flame going so the outside sears while the inside is still raw.

What Is The Temperature Range For Flat-Top Grills?

All flat top grills are designed to get really hot (most of them do it in 10 minutes or less). The range between high and low temperature varies between products, but most of the time you will be cooking at somewhere around 600-700 degrees. If your flat top is not getting hot enough for what you need, then you might want to invest in one that’s a bit more expensive because it has better insulation–the cheaper ones tend to get hotter overall but not necessarily at the lowest setting.

Can I Cook In Zones On A Flat-Top Grill?

Yes, but it’s not easy.  I’ve only done it once or twice in my life–usually when I’m cooking for a large group of people who all want to eat at different times. It’s very challenging to cook several things at once on one flat top grill (you need lots of patience and experience). If you do choose this method, make sure everything is prepped beforehand (marinating your meats, chopping your vegetables, etc).

What Foods Can I Cook With A Flat-Top?

Almost anything! But don’t be stupid… Don’t put fish right next to veggies unless you like fish that tastes like burnt rubber bands. You can heat up tortillas or bread itself or with cheese (we call it toasties and serve them with soup) and it’s awesome. The only foods I would stay away from are: really greasy food, fatty meat (especially pork), or something so big that you can’t cover the whole thing evenly on your flat top grill.

What If My Flat Top Grill Is Not Getting Hot Enough?

If you think your flat top grill is not getting hot enough on every burner, then try this method on your stove. Does one of the burners work well on high? Then on low–just turn it to about 1/8 of its total power level. Now use a small pot or pan to test each burner–if you can cook something in there using just the heat coming off of one burner on low, then you’re good. If not, then take the metal box that your flat top came in and put it right under the burner(s) that are not working well–I’ve NEVER had this method fail me.

Other Tips?

  • Don’t use spray oil or Pam on your grill grate unless you want to die of lung cancer–it makes cleaning so much easier though… I usually just scrub mine with a wire brush while it’s still hot.
  • You can cook almost anything directly on your grill grate if it’s non-stick (as long as one side is nice and hot). I’ve done eggs, grilled cheese sandwiches, grilled veggies, etc directly on my grates before. It takes practice but eventually you’ll get the perfect combination of heat and timing.
  • If you have a really big flat top grill, put it on your driveway to cook–it will keep your house from smelling like food ALL DAY LONG.
  • Put aluminum foil under your grates if they are rusting or dirty to make cleanup easier–this also helps speed up the healing process if you need to turn all burners too high for a few minutes.
  • Grill pizza right after you’ve finished cooking something else… Pizza cooks so much better on a hot flat top that’s already been heated evenly throughout the cooking process! To practice, just put your dough directly on your hot grate right after you’ve turned off one burner (make sure it’s nice and crispy first).
  • If you’re cooking different kinds of meats, always start with your veggies first–that way the meat that takes longer to cook doesn’t end up overcooked by the time you serve everything.
  • Always preheat for about 10 minutes. This is essential to an evenly cooked meal and prevents “cold spots”. Cold spots are areas on a flat top grill where food gets burnt because it’s not properly heated yet. If you let your flat top heat up before putting any food on there, then this problem will probably never happen to you! Of course, if you’ve just used it and now there’s only one burner working correctly, then don’t bother heating it up–just put whatever you’re cooking directly onto that burner(s) and cook it as fast as possible with the lid open.
  • Don’t press down on your meat with a spatula or tongs unless you want to eat rubber bands for dinner–I know this sounds obvious, but most people don’t do it.
  • If you’re cooking something that’s going to take a long time (like stuffed meat), then put it into a baking dish before putting it onto the grill grate. If you don’t, then all the grease will drip out of the side and end up causing one burner to flare up while another isn’t even hot… Not good! By putting everything inside of an oven-safe container, you’ll avoid this problem completely. In fact, if your flat top doesn’t smoke horribly when you cook something that takes a long time, then it probably isn’t hot enough even though all of the burners are on.
  • If your meat is not fully cooked after 20 minutes on high, switch to low and cook until it’s done–if you don’t do this, most meats will be overdone by the time they’re finally done in the middle.
  • Don’t overcrowd your grill grate or flame-ups will happen more often than not–and when they do happen, there’s nothing you can do except clear everything off with tongs (which is annoying) and turn down the heat (which wastes gas).
  • Keep an eye out for flareups! If one happens when you’re fatty meat like hamburgers or hot dogs is being cooked, then close the lid and wait for it to die down before opening again–charcoal grills are better at containing them than gas.
  • Don’t cook fatty meats without a drip pan underneath your grill grate–this is another reason why flareups happen. If you don’t have a drip pan, just use aluminum foil instead of tongs to move anything that’s cooking on high heat.
  • If your meat is smoking a ton when it’s cooking on high or medium heat, turn it down! You’re going to ruin the meat if you keep letting all of those fat drippings burn onto your flat top… Trust me… I know this from experience.
  • Keep windows open while using a flat top grill. This is one of the reasons I hate using mine in the summer–it makes my whole house smell like food! If you must use it outside, then at least turn on your porch fan or keep an open window nearby to avoid this problem.
  • Keep gas hoses well maintained (including replacing them if they’re old) and make sure your regulator adjustment knob is turned all the way down when the grill is off.
